SAVORY HERBED MUSHROOM GRAVY
Any day of the week I love adding mushrooms to many of my favorite recipes. Mushrooms can work as a standalone veggie pleasing everyone including vegans and vegetarians. Since this is a meaty beef dish, the mushroom gravy ties it all together. When mushrooms and fresh herbs blend it will send you into an entirely different dimension. On one hand, the mushrooms add a meaty, savory, umami flavor, while the fresh herbs enhance this rich gravy. When the two are combined, the flavors will cause an explosion in your mouth!
SALISBURY STEAK INGREDIENTS
This Salisbury Steak is loaded with a ton of flavor! There is even a little red wine because I can’t help myself.
- Ground Beef: I like ground sirloin for these steaks, but an 80/20 ground beef blend works just fine. Just be sure to drain all of the fat!
- Spice Blend: I use my typical house seasoning blend of garlic and onion powders, salt, and pepper, along with mustard powder, and Worcestershire sauce.
- Bread Crumbs: The breadcrumbs help these steaks retain moisture, making them juicy and delicious. I like using seasoned breadcrumbs but can be substituted with panko or regular breadcrumbs.
- Onion, garlic, and bell pepper: The typical aromatic and flavor game players here. I like using sweet peppers like red, orange, or yellow. These all add the perfect amount of sweetness to the steaks.
- Tomato paste: Helps to intensify the flavor of the steaks, but can be substituted with ketchup.
- Beef Broth: Adds a beautiful depth of flavor to the gravy.
- Red Wine: Adds rich flavor to the steaks. I like using good, dry red wine here.
- Mushrooms: Cremini, Button, Portobello, it really doesn’t matter here. I like using Baby Bella mushrooms, but just pick your favorite or use what is readily available.
- Fresh Herbs: Use whatever you have on hand. I typically always have fresh rosemary and thyme.
HOW TO MAKE SALISBURY STEAK
- Saute the vegetables: Add the oil and saute the onions and bell pepper until the vegetables are translucent.
- Make the patties: Using your hands, form the beef into 4-5 equal patties.
- Cook the steaks: Add the olive oil to the skillet and cook the patties until browned. Remove the cooked patties and place on a plate.
- Saute the vegetables and make the roux: Add the onions and mushrooms to the skillet and saute. Next, add the garlic and tomato paste and stir until you can smell the garlic. Lastly, add the butter and flour and cook for about two minutes
- Deglaze & add stock: Once the flour and butter are added, whisk in red wine to deglaze, followed by the beef stock and herbs.
- Return the steaks: Return the steaks back to the skillet to finish them in the gravy. Allow steaks to cook for another 5 minutes. Once done, remove from heat and serve.
