This popsicle recipe is fresh, sweet, and refreshing. The flavor of the mangos and raspberries along with the tangy Tajin will be a hit all summer long!
Like my other popsicle recipes, this one is also easy to make, healthier than your grocery store pops, and it is also wallet-friendly.
I love making popsicles from fresh fruit because it allows me to utilize any leftover fruit to create something delicious. Bonus: it prevents waste!
As you may know, I live in Texas. Every day after school, my son would come home with pockets of Tajin. I would always ask him where he’d get it from, and I learned that they received pockets full of Tajin from the school cafeteria. I had no idea! When I was in school, the most we’d get with lunch was an apple or an orange, fast forward and my son and his classmates get free tajin, go figure!
What is Tajin seasoning and what does it taste like?
Tajin is a popular Mexican condiment made from a blend of chile peppers, lime, and sea salt. Where I am from people love to add this seasoning to fruit and veggies. As for me, I especially like it on corn. It is also a delicious addition to chicken, shrimp, and even eggs! Try adding it to tacos.
Tajin has a tangy, lime taste and is not very spicy, which makes it perfect for these Mango Raspberry popsicles.
Ingredients:
Diced Mango – I prefer using fresh fruit because I usually make fruit popsicles with leftover fruit to prevent waste, but frozen works well here too.
Fresh Raspberries – Can be substituted with frozen ones.
Lime Juice – A little fresh lime juice really enhances the flavor of the popsicles.
Tajin – Tajin comes in an assortment of flavors, but for this recipe, I am using the Classic Chile Lime Seasoning.
Sugar – I used granulated sugar, but this can be substituted with honey or agave.
How To Make Mango Raspberry Tajin Popsicles
- Make The Raspberry Jam – Add the raspberries, water, and 1 tbsp of sugar to a saucepan and stir the ingredients together. Allow the sauce to cook for 5 minutes, mashing the berries with the back of a spoon until the sauce thickens.
- Blend The Other Ingredients – Add the diced mango, remaining sugar, and lime juice to a blender and blend the ingredients until smooth.
- Add The Tajin – Stir in half of the Tajin into the mango mixture.
- Fill – Sprinkle the remaining Tajin into the popsicle molds. Next, add the mango mixture. Finally, add the raspberry mixture. Using a toothpick, swirl together the raspberry and mango mixtures.
- Freeze – Place the mixture in the freezer for 4 to 6 hours.
