This recipe is hands down one of my favorites to make!! On a cold winter day, it’s one of those things that’ll warm you to the core. If you prefer a baked potato and would love to savor every single bite without being interrupted by the skin, then this recipe is for you.

Parmesan Mashed Potatoes

Ingredients

  • 2 pounds golden potatoes, diced

  • 1 tbsp butter

  • 1/4 cup heavy cream

  • 1 cup parmesan cheese, shredded

  • 2 tbsp chopped chives, plus more for garnish

  • Salt and white pepper to taste

Directions

  • Prepare the potatoes by scrubbing them clean.
  • Peel and dice the potatoes and place them in a pot of cold, salted water.
  • Bring the potatoes to a boil and cook until the potatoes are fork tender, about 20 minutes.
  • Remove the potatoes from the heat and drain the hot water from the pot.
  • Place the potatoes in a bowl, and mash them using a potato masher or the back of a large wooden spoon.
  • Add the butter, cream, chives, and parmesan cheese. Season with salt and white pepper and mix well.
  • Garnish with chopped chives and serve immediately.
