This recipe is hands down one of my favorites to make!! On a cold winter day, it’s one of those things that’ll warm you to the core. If you prefer a baked potato and would love to savor each and every single bite without being interrupted by the skin, then this recipe is for you.

Parmesan Mashed Potatoes

Ingredients

  • 2 pounds golden potatoes, diced

  • 1 tbsp butter

  • 1/4 cup heavy cream

  • 1 cup parmesan cheese, shredded

  • 2 tbsp chopped chives, plus more for garnish

  • Salt and white pepper to taste

Directions

  • Prepare the potatoes by scrubbing them clean.
  • Peel and dice the potatoes and place them in a pot of cold, salted water.
  • Bring the potatoes to a boil and cook until the potatoes are fork tender, about 20 minutes.
  • Remove the potatoes from the heat and drain the hot water from the pot.
  • Place the potatoes in a bowl, and mash them using a potato masher or the back of a large wooden spoon.
  • Add the butter, cream, chives, and parmesan cheese. Season with salt and white pepper and mix well.
  • Garnish with chopped chives and serve immediately.

I don’t usually eat a lot of potato salad, but somehow, my mom always made it worthwhile. People said she made the BEST potato salad and I gotta say, they were not wrong. I kid you not! She actually sold it! I have never been a huge fan of potato salad, but this recipe is probably the only one I’ll eat! So, here we are with another one of my favorite childhood recipes. It’s not exactly like Mom’s, but it’s pretty darn good! This is the only way I make it and the only way my family eats it.
