TOMATO BACON JAM INGREDIENTS

  • Bacon – 1 pound of smoked bacon
  • Onion – one medium sweet onion
  • Tomatoes – 1 pound of fresh tomatoes, any variety
  • Garlic – about 2 cloves of garlic
  • Sugar – brown sugar and granulated sugar
  • Vinegar – apple cider vinegar, can substitute with balsamic vinegar
  • Spices – Smoked paprika, cayenne pepper

Ingredients

  • 1 pound smoked bacon, diced

  • 1 medium onion, diced

  • 16 oz fresh tomatoes, diced

  • 2 cloves garlic, minced

  • 1/4 cup brown sugar

  • 1 Tbsp granulated sugar

  • 2 tsp apple cider vinegar

  • 1 tsp olive oil

  • 1/2 tsp salt

  • 1 tsp smoked paprika

  • 1/4 tsp cayenne

  • Pinch white pepper

Directions

  • Heat 1 tsp of olive oil in a skillet or saucepan. Add the bacon and cook bacon until crispy, then transfer it to a paper towel-lined plate to drain.
  • Remove all but 1 tbsp of the oil grease from the pan, then add the onions.
  • Cook the onions for about 10 minutes until softened and caramelized.
  • Add the diced tomato, cooked bacon, garlic, spices, vinegar, salt, and sugars.
  • Stir everything well and bring to a boil, then reduce to simmer for 30 – 45 minutes, stirring about every 10 minutes or so until thickened.
  • Remove from heat and serve.
