This recipe is as simple as tossing the chicken in the marinade to soak up all the goodness, and then baking them in the oven until they are nice and crispy.

CHIPOTLE HONEY CHICKEN DRUMSTICK INGREDIENTS

Chicken  – about 4 pounds of chicken drumsticks, patted dry

Canned chipotle peppers in adobo sauce – Gives the chicken it’s delicious smoky flavor

Honey – add sweetness that helps to balance the salt in the marinade

Garlic  – finely minced garlic

Cilantro – Fresh chopped cilantro

Olive oil – virgin olive oil

Lime – Freshly squeezed lime juice is preferred

Salt – sea salt

HOW TO MAKE

Follow these steps to make this recipe:

  1. Make the marinade – In a large bowl or ziplock bag, add all of the ingredients and mix well to combine. Place all the chicken legs inside a large ziplock bag or a large mixing bowl and pour all the marinade over it, tossing the marinade and chicken together well to coat it well in the marinade.
  2. Refrigerate – Place the chicken in the refrigerator and allow it to marinate for 6 hours up to overnight.
  3. Bake – Preheat the oven to 400°F. Remove the chicken from the refrigerator and place it on a foil-lined sheet pan. Brush the chicken with the reserved marinade and place in the oven to bake for 22 minutes, then turn it over and brush with more of the reserved marinade. Continue baking for another 23 minutes. Remove from the oven and serve.

PRO TIPS FOR MAKING THIS RECIPE

  1. Pulse the marinade. Place the marinage ingredients in a blender and pulse for a couple of minutes for an extra flavorflul marinade.
  2. Fully heat the oven. A hot oven is key to delicious juicy chicken with crispy skins. Make sure your oven is fully heated for best results.
  3. Use chicken thighs. Try this recipe with all chicken thighs or a mix of legs and thighs
  4. Broil. For extra crispy chicken, place on the top rack and broil for 2 minutes or until the skins are nice and brown.

Ingredients

  • 4 pounds 4 chicken drumsticks ( about 14 drumsticks)

  • 3 cloves 3 garlic, minced

  • 4 tbsp 4 honey

  • 1/4 cup 1/4 olive oil

  • 1 3.5 oz 1 can chipotle peppers in adobo sauce (about 5 peppers), seeded, diced

  • 3 tbsp 3 lime juice

  • 1 tbsp 1 salt

  • 1 tsp 1 pepper

  • 3 tbsp 3 fresh cilantro, finely chopped

  • 1 tsp 1 black pepper

Directions

  • In a bowl, combine all of the marinade ingredients and whisk well to combine.
  • Place the chicken legs inside a large ziplock bag or a large mixing bowl and pour all the marinade over it, tossing the marinade and chicken together well to coat it well in the marinade. Cover the mixing bowl with plastic wrap or place the ziplock bag into the refrigerator and allow the chicken to marinate for 6 hours up to overnight.
  • Preheat the oven to 400°F and line a sheet pan with foil wrap. Place the chicken legs on the sheet pan, reserving the marinade. Brush the chicken with the reserved marinade and place in the oven. Bake the chicken in the preheated oven for 22 minutes, then turn it over brush the chicken in the reserved marinade and bake for another 23 minutes.
  • Remove from the oven and enjoy!

Notes

  • Fully heat the oven. A hot oven is key to delicious chicken with crispy skins. Make sure your oven is fully heated for best results.
  • Chicken must reach an internal temperature of 165 degrees before done.
