Are you looking for a hassle-free and delicious dinner idea? You can never go wrong with this Taco Casserole recipe! This dish is loaded with cheesy goodness and has the perfect blend of flavors. Plus, it only requires a handful of ingredients, making it a quick and easy option for any night of the week.

I like this Taco Casserole Recipe because it can be customized to your dietary needs. So if you need to sub things out you absolutely can! If you don’t like full-fat sour cream, use fat-free! If you prefer leaner ground beef options don’t be afraid to substitute them in this recipe.

CAN YOU MAKE TACO CASSEROLE AHEAD?

This is absolutely a make-ahead recipe! Just follow the recipe instructions to step 3, and then cover and place it in the refrigerator. As a matter of fact, I recommend that you make this ahead for a few reasons. One, you will save yourself valuable weeknight time. Second, you will allow the seasoning to marinate overnight, resulting in an even tastier casserole.

TACO CASSEROLE INGREDIENTS

Ground Beef – A standard 80/20 mixture will give this casserole so much flavor, but you can opt for 90/10 ground beef, ground turkey, or even ground chicken.

Onion – One whole onion

Garlic – What’s a casserole without a little garlic?

Black beans – Canned or fresh works fine here

Salsa – You can use regular jar salsa, but fresh or homemade salsa is really good here too.

Sour Cream – Full-fat sour cream or fat-free options are both fine.

Shredded Cheese – I use a combination of cheddar and Monterey jack cheese. If you can’t find Monterey jack cheese in your area, substitute it with pepper jack or white cheddar cheese.

Flour Tortillas – You’ll need 6 flour tortillas, and while I love freshly made tortillas, store-bought will work fine here.

Black Olives – Canned or jar olives sliced black olives.

Spices – I use garlic, onion powder, chili powder, oregano, cumin, and paprika. Please note that these can be replaced with a standard taco seasoning packet mix.

HOW TO MAKE TACO CASSEROLE

  1. Sauté the onion: In a skillet, add the oil and sauté the onions for 5 minutes.
  2. Add the beef: Add the beef to the skillet and season with salt and pepper. Cook the beef until browned then drain any fat. Add the garlic and all of the seasoning. Stir well.
  3. Add the ingredients: Stir in the salsa, black beans, and sour cream until combined.
  4. Layer the casserole: Layer the ingredients in the casserole dish by placing a layer of the sauce on the bottom of the dish, then place three tortillas followed by cheese. Repeat this step once more, then top with olives.
  5. Bake – Bake in the oven for 30 minutes or until cheese is melted and bubbling.

Ingredients

  • 1 pound ground beef

  • 1 yellow onion, finely chopped

  • 2 cloves garlic, minced

  • 2 cup chunky salsa (1 16 oz can)

  • 1/2 cup sour cream

  • 2 tbsp black olives, sliced

  • 2 cup shredded cheddar cheese

  • 1/4 cup black beans

  • 6 flour tortillas

  • 1 tsp garlic and onion powder

  • 1/2 tsp cumin

  • 1/2 tsp tsp oregano

  • 1 tsp chili powder

  • 1/2 tsp paprika

  • 2 tbsp olive oil

  • salt and pepper to taste

  • cilantro, garnish

  • sliced green onions, garnish

Directions

  • Preheat the oven to 400 degrees. Then grease a casserole dish and set it aside.
  • In a skillet, add the oil and saute the onions for 5 minutes. Then, add the ground beef, garlic, and all of the seasoning. Stir well and season with salt and pepper.
  • Stir in the salsa, black beans, and sour cream.
  • Layer the ingredients in the casserole dish by placing a layer of the sauce on the bottom of the dish, then place three tortillas followed by cheese. Repeat this step once more, then top with olives.
  • Top with black olives, then cover with foil and bake for 30 minutes.
  • Remove from the oven and top with chopped cilantro and sliced green onions.

  • You can replace all of the seasonings (garlic, onion powder, chili powder, oregano, cumin, and paprika) with a taco seasoning packet mix.
