Peach Cobbler is one of my favorite desserts to make in the summertime! It earns extra points because my mom always made peach cobbler. If you ask anyone who knows my family, they would rave about her cobbler! My mom always made her peach cobbler with canned peaches, but you’d never know because it always tastes so good!

This recipe isn’t my mom’s, but it is really good! Most peach cobbler recipes call for a bit of nutmeg and cinnamon. I am swapping out the nutmeg and using cardamom instead. If you’ve seen any of my videos or ever heard me speak, then you already know all about my love for cardamom. Cardamom is a spice in the ginger family. It is also hailed as the Queen of Spices in India. In this cobbler recipe, cardamom adds a sweet yet subtle citrus taste that warms your soul. Making this the perfect dessert for not only summer months but also winter!

Peaches – This recipe is made using fresh peaches, however, you can substitute them with 2 15 oz cans of peaches.

Pie Crust – 2 prepared pie crusts

Sugar -granulated sugar and packed brown sugar

Butter  – unsalted butter

Lemon juice – The juice of one lemon adds freshness and much-needed acidity to this pie.

Spices – Cardamom and cinnamon

HOW TO MAKE PEACH COBBLER

  1. Prepare the peaches – Clean, peel and slice the peaches. In a small bowl, mix the tablespoon of sugar with 1 tsp brown sugar and set aside. 
  2. Make the filling – In a saucepan, add the sugar, spices, butter, lemon juice and sliced peaches. Bring to a boil, then reduce and cook for 5 minutes. Remove from heat and set aside. 
  3. Roll out the dough – Roll out your pie dough and place one pie dough at the bottom of a 13 x 9-inch baking dish. Roll out the second pie dough and cut it into strips.
  4. Fill the pie crust – Add the warm peach mixture to the baking dish and top with the pie dough strips. Brush the top of the crust with melted butter, then sprinkle with the reserved sugar mixture.
  5. Bake – Bake the cobbler in a preheated oven at 350°F ( 177°C) for 30-45 minutes, until the peaches are bubbly and the crust is golden brown.
  6. Serve – Top with ice cream and serve warm.

Ingredients

  • 8 fresh peaches, peeled, sliced

  • 1 cup plus 1 tablespoon granulated sugar

  • 1/4 cup plus 1 tsp brown sugar

  • 1 tbsp butter

  • 1/4 cup lemon juice

  • 1 tsp cinnamon

  • 1/4 tsp cardamom 

  • 2 prepared pie crusts 

  • melted butter, for brushing the top

Directions

  • Preheat oven to 350°F ( 177°C). 
  • In a small bowl, mix the tablespoon of sugar with 1 tsp brown sugar and set aside. 
  • If using fresh peaches, peel and slice the peaches.
  • In a saucepan, add the sugar, spices, butter, lemon juice and sliced peaches. 
  • Bring to a boil, then reduce and cook for 5 minutes.
  • Remove from heat and set aside. 
  • Roll out your pie dough and place one pie dough at the bottom of a 13 x 9-inch baking dish.
  • Roll out the second pie dough and cut it into strips.
  • Add the warm peach mixture to the baking dish and top with the pie dough strips. Brush the top of the crust with melted butter, then sprinkle with the reserved sugar mixture.
  • Place in the oven at 350 degrees for 30-45 minutes, until the peaches are bubbly and the crust is golden brown.
  • Allow to cool slightly before serving with ice cream.
