This leftover turkey casserole is not only delicious, but it is also simple to make with only a few ingredients. It is layered with tons of turkey, savory vegetables, and cheese, making it the perfect after-holiday brunch casserole.

A strata is a casserole or savory bread pudding layered with bread, eggs, and cheese. This version is made with leftover holiday turkey, crispy bacon, bell pepper, and lots of fresh herbs. If you are not a turkey fan, you could easily swap out the turkey here for any other protein of your choice, like ham or beef. This is the perfect after-holiday brunch casserole dish to feed any crowd! I love this casserole because not only do you prepare it the night before, but it is also made with ingredients you probably already have in your kitchen. There is no need to go out and buy fancy cheese here unless you want to.

LEFTOVER TURKEY STRATA INGREDIENTS

Bread – Sliced bread is fine, but any bread will do.

Turkey– Any leftover turkey will do. I used a combination of dark and white meat.

Eggs – 5 large eggs

Bacon – What’s life without a little bacon? I used about 4 strips of thick-sliced bacon

Vegetables – Onion, bell pepper, garlic

Milk – I used whole milk, but feel free to substitute it here however you like.

Cheese – I use whatever cheese I have on hand, including Cheddar, Swiss, and Monterey jack.

Butter – I used real butter, but I have also tried this recipe with vegan butter and I gotta say, it is a delightful alternative.

Fresh herbs – Use whatever you have already. If you are making this during the holiday season, fresh sage, rosemary, or thyme are great choices.

HOW TO MAKE LEFTOVER TURKEY STRATA

  1. Chop the Bread: Chop the bread into cubes and place it into a prepared pan, then pour the melted butter over the bread
  2. Cook The Bacon: Heat 2 tsp of oil in a skillet, then add the bacon and cook until crispy. Remove the bacon from the skillet and allow it to drain on a paper-towel-lined plate.
  3. Sauté The Vegetables: Add the veggies and herbs to the skillet and season with salt and pepper. Allow the vegetables to saute for 5 minutes. Remove the heat
  4. Whisk The Eggs and milk: In a medium bowl, add the eggs and milk. Season with salt and pepper and whisk well.
  5. Layer The Casserole: Begin layering the casserole by adding the vegetable mixture, then the diced bacon and turkey, and finally pour the egg mixture over the bread. Top with shredded cheddar cheese.
  6. Refrigerate: Cover the casserole with foil and refrigerate for 2 hours.
  7. Bake: Bake in a preheated oven at 350 degrees for 30-45 minutes. Remove from the oven and allow to it for 5 minutes before serving.

CAN YOU MAKE AHEAD?

This is absolutely a make-ahead recipe! Just combine the recipe ingredients, top the dish with shredded cheddar cheese, then cover with foil and refrigerate overnight (2 hours, up to 24 hours). Once you are ready to bake, preheat the oven to 350 degrees for 30-45 minutes or until golden and puffed. Remove the casserole from the oven and allow it to rest for 5 minutes before serving.

Your family and/or guests will think that you spent way more time preparing this than you did. It is so flavorful and smells so divine when baking. Serve this casserole alongside your favorite fresh fruit or juice. If you are really feeling a little brunchy, go ahead and add a mimosa or two!

Ingredients

  • 10 slices 10 bread, cut into cubes

  • 1 cup 1 leftover turkey, chopped

  • 4 strips 4 bacon, diced

  • 5 5 eggs

  • 1 1 onion, diced

  • 1 1 bell pepper, diced

  • 2 2 cloves of garlic

  • 1 cup 1 whole milk

  • 1 cup 1 shredded cheese

  • 1 tsp 1 rosemary

  • 1 tsp 1 oregano

  • 1 tbsp 1 melted butter

  • 2 tsp 2 olive oil

  • Salt and pepper to taste

Directions

  • Grease a 9×13-inch pan and set aside
  • Chop the bread into cubes and place it into the prepared pan, then pour the melted butter over the bread.
  • Heat 2 tsp of oil in a skillet, then add the bacon and cook until crispy. Remove the bacon from the skillet and allow it to drain on a paper-towel-lined plate.
  • Drain most of the bacon grease from the skillet, then add the veggies and herbs. Season with salt and pepper and saute for 5 minutes. Remove the heat.
  • In a medium bowl, add the eggs and milk. Season with salt and pepper and whisk well.
  • Begin layering the casserole by adding the vegetable mixture, then the diced bacon and turkey, and finally pour the egg mixture over the bread. Top with shredded cheddar cheese.
  • Bake in a preheated oven at 350 degrees for 30-45 minutes.
  • Remove from the oven and allow to it for 5 minutes before serving.
