This recipe for Strawberry Pie is my absolute favorite! Fresh strawberries and an easy-to-make glaze piled into a buttery crust. You’ll wonder why you haven’t made this pie sooner! This recipe blog also includes my homemade strawberry sauce recipe, perfect for making strawberry pie.

Welcome to the pie of my childhood. Growing up, my dear aunt used to work at a coffee shop where they served the best strawberry pie! She would often bring us home leftovers, which we’d happily eat. Sometimes, if we were lucky, we’d get to have a slice of this amazing pie when we’d visit her at work.

When I think back, our family gathering wasn’t a gathering until the strawberry pie arrived. I used to request this pie every year for my birthday as a child. It was the one gift I couldn’t wait to receive!

Fresh Strawberries – What’s a strawberry pie without tons of strawberries?!

Pie Crust – 1 prepared pie crust, par-baked in the oven

Strawberry Jello – 1 package of strawberry-flavored gelatin is used to help thicken this super easy strawberry sauce.

Lemon juice – The juice of one lemon adds freshness and much-needed acidity to this pie.

Sugar -granulated sugar, but cane sugar also works too

Vanilla extract – Only a hint of vanilla is needed

Cornstarch – Helps to thicken the strawberry sauce.

HOW TO MAKE STRAWBERRY PIE

  1. Bake the pie crust – Fully blind bake the pie crust according to the instructions, set aside and allow it to cool.
  2. Make the glaze – In a saucepan, add the jello, sugar, cornstarch, lemon juice and water. In a saucepan, add the jello, sugar, cornstarch, lemon juice and water. Bring the ingredients to a boil, then reduce and simmer for two minutes.
  3. Fill the pie crust – Load the pie crust with lots of fresh strawberries. Then pour the glaze all over it.
  4. Serve – Top with whipped cream and serve chilled.

HOW TO MAKE HOMEMADE STRAWBERRY SAUCE

Follow these simple steps to make homemade strawberry sauce:

  1. Make Strawberry Sauce – Add the chopped strawberries, sugar, lemon juice, and water to a saucepan and stir well. Bring the mixture to a boil, then reduce and simmer for 10 minutes.
  2. Puree The Sauce – Add the strawberry mixture to a blender and pulse until smooth. Strain the sauce to remove the seeds, then place back in the saucepan. Return the sauce to heat then whisk in the cornstarch until the sauce thickens. Remove from heat and allow it to cool.

TIPS TO MAKE THE BEST STRAWBERRY PIE

  1. Use ripe, in-season strawberries. In-season strawberries are typically bigger, fresher, and sweeter.
  2. Make homemade whipped cream. While I understand the convenience store-bought whipped cream provides, there is nothing like homemade whipped cream!
  3. Bake the pie crust according to the directions. This is very important. Whether you intend to buy a pie crust or make it from scratch, following the directions will ensure that your pie crust will come out perfectly out of the oven.

Ingredients

  • 2 lbs 2 fresh strawberries, cleaned, tops removed

  • 1 3 oz 1 box of strawberry jello

  • 1/3 cup 1/3 sugar

  • 1/4 cup 1/4 lemon juice

  • 1/4 tsp 1/4 vanilla extract

  • 2 tbsp 2 cornstarch

  • 1 cup 1 water

  • 1 1 prepared pie crust

  • 1 cup 1 cold heavy whipping cream

  • Optional Homemade Strawberry Sauce
  • 2 cups 2 strawberries, roughly chopped

  • 1/2 cup 1/2 sugar

  • 1 1 lemon, juiced

  • 2 tbsp 2 cornstarch

  • 1/2 cup 1/2 water

Directions

  • Bake the pie crust according to the directions on the package. Remove from oven and set it aside to allow the crust to cool to room temperature.
  • In a saucepan, add the jello, sugar, cornstarch, lemon juice and water. Whisk well to combine, then bring it to a boil. Reduce the heat and allow it to simmer for 2 minutes, then remove it from the heat. Whisk in the vanilla extract and allow it to cool to room temperature. Place the cooled sauce in the fridge for 10 minutes.
  • Clean and dry the strawberries, the place them in the pie crust.
  • Add the chilled sauce on top of the pile of strawberries, then top with whipped cream.
  • Optional Homemade Strawberry Sauce Directions
  • Add the chopped strawberries, sugar, water, and lemon juice to a saucepan. Bring to a boil, then reduce and simmer for 10 minutes.
  • Puree the strawberries using a blender, then add the cornstarch and place back on the stove for about 2 minutes.
  • Strain the strawberry sauce using a fine mesh strainer.
  • Remove from heat and allow it to cool to room temperature before use.
